Mini Pound Cakes with Buddy Fruits Organic Mango Fruit Spread

RECIPE DESCRIPTION:

Adding our Organic Mango Fruit Spread to your Mini Pound Cakes doesn’t just make them extra tasty, but we don’t add any preservatives, corn syrups, artificial sweeteners or flavors, colorings, and common allergens like dairy, gluten or nuts in our pouches!

INGREDIENTS:

  • 1 ½ cups unsalted butter (3 sticks), softened at room temperature
  • 3 cups granulated sugar
  • 6 large eggs, at room temperature
  • 3 cups cake flour
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 cup Buddy Fruits Organic Mango Fruit Spread

DIRECTIONS:

  1. Heat oven to 325 degrees. Place mini muffin tins in mini muffin pan.
  2. In a large bowl, combine butter and sugar. Using an electric mixer, beat on high speed until creamy, 3 to 4 minutes. Add the eggs one at a time, beating well after each addition.
  3. Beat in about 1 cup of the flour until well combined, then beat in half the cream. Add in another cup of flour then the rest of the cream. Finish with adding the final cup of flour. Mix well after adding in each.  
  4. Add in vanilla. 
  5. Squeeze about 1/2 teaspoon of Buddy Fruits Organic Mango Fruit Spread into each muffin tin.
  6. Pour the batter into each muffin tin about halfway up each tin. Squeeze another 1/2 teaspoon of Buddy Fruits Organic Mango Fruit Spread on top of each.
  7. Bake until golden brown and a cake tester comes out clean, 15 to 25 minutes. Allow the mini pound cakes to cool in the pan for 15 to 20 minutes before turning out onto a cooling rack to cool completely.
