Roasted Strawberry Tart

RECIPE DESCRIPTION:

INGREDIENTS:

For the filling

  • 1 pint strawberries (roasted or raw) 
  • 4 tbsp Buddy Fruits Organic Strawberry Fruit Spread 
  • 4 oz cream cheese, softened 
  • 2 tbsp sugar
  • 2 tbsp lemon juice 
  • 1 egg yolk (save egg white for pastry!) 
  • 1 lemon, zested 
  • 1 tsp vanilla 
  • 1 tsp salt 

For the pastry:

  • 1 package of puff pastry dough unthawed 
  • Egg white (to brush the pastry dough with) 

DIRECTIONS:

  1. If you are roasting your strawberries, preheat the oven to 425 degrees and then roast the strawberries for 30 min.
  2. In a medium bowl smash roasted strawberries and combine with cream cheese, egg yolk, lemon juice, lemon zest, salt and vanilla. 
  3. On a lightly floured surface, roll puff pastry into a 13-by-11-inch rectangle about ⅛-inch thick. Transfer the dough to a parchment-lined baking pan. With a sharp knife, score a 1-inch border along the edges of the puff pastry (don’t cut all the way through).
  4. Spread the cream cheese mixture evenly inside the scored border. 
  5. Then evenly distribute 6 tablespoons of Buddy Fruits Organic Strawberry Fruit Spread on top of the cream cheese filling and arrange the strawberries on top in a single layer. 
  6. Bake until the pastry is puffed and golden, 22 to 30 minutes. Transfer pan to a wire rack to cool for at least 20 minutes or up to 8 hours before serving. 
  7. Slice and serve!
